We don’t do floor malting. Instead, we use a 40-ft Germination-Kiln-Box, essentially a smaller version of what you might see in a large commercial operation. This is what makes homogenous germinations and even kilning possible.
Further, this allows us to control moisture, temperature and time to exact specifications for each batch. Consequently, we get flavor-forward and distinct malts that allow our customers to stand apart with their creations, while getting a modern, functional and well modified malt.

Our Foundation offers both functionality and eloquent flavor, characteristic of our region’s grain shed. Sourced where you brew from small-to-mid-scale farmers, our malting process for this pale malt includes an extended germination period, allowing each batch to rest in a cool, CO2-rich environment. This results in a well-modified, enzymatically functional base malt. Finishing out the process, we kiln at a final cure of 84 degrees Celsius, which eliminates grassy flavors and ensures a low DMS-ps. The result is a versatile and flavor-forward base malt that adds unique depth and color to any recipe.
